Willowbeez SoulVeg Joining North Market
Vegan soul food eatery Willowbeez SoulVeg has found a permanent home at North Market Downtown, 59 Spruce St.
Operating as a pop-up and catering company since 2012, Willowbeez will make minimal changes to the stall in the northwest corner of the building, formerly occupied by Pistacia Vera, before opening this spring.
“I am steeped in gratitude and looking forward to joining this historical landmark in the Columbus foodscape,” says Owner Carnell Willoughby. “North Market is a centralized hub for unique and diverse food vendors. We are ready and excited to introduce our vegan goodness with love as the main ingredient.”
Willowbeez’s menu features vegan spins on classic soul food dishes, like the Rich Boi’, their take on a Po’ Boy featuring breaded oyster mushrooms, or “GrabCake” sliders, vegan mac & cheese and vegan cornbread.
“Carnell and Willowbeez are going to be a wonderful addition to the Market,” says North Market Executive Director Rick Harrison Wolfe. “Aside from his best-in-class vegan soul food, Carnell is truly community-minded and I know he will bring that spirit to the merchant mix.”
Willowbeez will also offer cooking demos and classes.
With their move to the North Market, the eatery ends a five plus year run as a regular pop-up at the Hills Market Downtown. A social media post announced that February 19 would be the final pop-up and thanked the market for its role in building their business.
“This BEAUTIFUL experience has assisted in our growth as a business,” the post read. “They even made significant strides to aid us during COVID-19 when we were abruptly displaced from our commercial kitchen space. It has been a true incubation space for Willowbeez SoulVeg. We have always been met with hospitality, love, and acceptance. We are steeped in gratitude for the staff and management. Their business model afforded us a dope space to learn and grow.”
An official opening date for Willowbeez SoulVeg at North Market will be announced in the coming months.
