    Treat to Try: Raspberry Lattice Cookie Square

    Usually when I stop into Weiland’s Gourmet Market, I have a hard time avoiding the dessert cases. Last time I was in, I spotted this pretty jewel of a cookie, the Raspberry Lattice Cookie Square by The Suisse Shop Bakery. It’s a 3″ square of delight, sold chilled, and only $2.29. This cookie is a must if you like pie crust.

    It’s a thin layer of raspberry preserves sandwiched between two layers of what seems to be a sugar cookie dough, but almost tastes like pie crust. (Maybe I was just in that mind-set). It’s the convenience of a cookie when you’re in the mood for pie, but don’t want to make, or eat, a whole pie, and have no occasions coming up for sharing. The top of the cookie is baked to a very light crisp. You could serve these bite sized for a party, or even as a fun topper for cupcakes. Overall, a pretty sweet deal.
