    Sweet Carrot Opening Third Location on Sawmill

    Sweet Carrot’s third location is coming to Dublin. Entering a former Pei Wei on Sawmill Road, the restaurant is set for an October opening.

    Sweet Carrot first opened in Grandview in 2015 under local entrepreneur Angela Petro, who also owns Two Caterers. The restaurant’s second location, which sits at 2050 Polaris Parkway, opened earlier this year in February. Sweet Carrot’s third spot, at 7571 Sawmill Rd., was a natural next pick for Petro, who said they’d been looking to expand in the “Worthington-Dublin-Polaris northern corridor” since conceptualizing their second Sweet Carrot.

    The new digs are slightly larger than the Polaris location, offering 3,300 square feet. Like the others, it’ll offer an identical menu but maintain its own personality. Petro imagines a “fantastical
 or “magical” theme for the Sawmill building. Working with local artists and designers, including Jen Stephens, Mynte Design Company, Dylan Menges, and Grand Design, she’s hoping to pull of a subtle motif that complements the natural shape of the building.

    “We’re in a longer, more narrow location, and it reminded us of a beer hall or a circus tent, so we started to dream out what art would support those ideas,” Petro shared, clarifying that it would be a loose theme, not something over-the-top. “It’s an evolving process. The space informs the feel, and then you start to think how the original art and Sweet Carrot quirkiness — how does that inform that concept.”

    The new Sweet Carrot on Sawmill is expected to hire between 65 and 70 people.
