    Speciality Grocery/Bakery/Restaurant Coming Soon to Old North Columbus

    When we last checked in with Dan Kraus of That Food Truck, he had his sights set on opening something new called “The Butcher’s Baker” in Italian Village. The bad news, is that it’s no longer happening.

    “That was kind of me swinging for the fences,” he admits. “The plan was to own the building and the lot and that was a pretty big investment. We did everything for that space… got our variances, permits… everything up until construction. But it didn’t work out, so I was pretty bummed out.”

    There’s some good news to be had though, as the concept has been restructured a bit and given a new name (Baba’s) and a new location (2515 Summit Street).

    “I actually looked at the space at the corner of Hudson and Summit two years ago, but it was too big,” says Kraus. “The owners split it down the middle, and now it’s perfect.”

    Kraus describes the concept going into the 1,400 square foot space as a speciality grocery store, but says that it will provide a little bit of everything for everyone. Baker Matt Swint from Matija Breads will be installing commercial ovens for production, pastry chef Jackson Roecker will be serving up breakfast items along side coffee from local roaster Thunderkiss, and Kraus himself will be curing charcuterie cuts from Ohio-grown meats.

    “Baba’s will be kind of a combination of everything with the big focus on the bread and the high-end charcuterie,” he explains. “We’ll be open for dinner service some nights with beer and wine, but we only plan to have four or five two-top tables, so it’s first come, first serve. I’m really excited about that because I haven’t been able to plate food the way I want to in awhile, so we’re going to be able to play and have some fun.”

    Heavy construction is expected to start at Baba’s within the next few weeks, and Kraus expects to open sometime after the first of the year. He said that the production ovens and wood-fired equipment will take some time to be delivered and constructed and installed, but he expects some products to be made available in advance on smaller system in the interim.
