Sneak Peek: M at Miranova’s New Look and Menu
After a facelift, M at Miranova reopens this Tuesday, June 18. The 18-year-old restaurant, located at 2 Miranova Pl., on the first level of the Miranova tower Downtown, underwent an extensive remodel and will present an almost entirely new menu upon opening.
“Eighty percent of the menu is different,” says Ian Rough, Regional Chef of Cameron Mitchell Restaurants, “and even the things that stayed on the menu we kind of gave a new touch to.”
Their sea bass, shrimp tempura, sliders, scallops and tomato soup all remain on the menu, but that’s where the similarities between new and old end. M now has a five-course tasting menu comprised of smaller portions of what you’d find on the standard menu. Starting with an appetizer, the tasting menu continues with a salad, a fish entree, a steak and dessert. Rough says the tasting menu will evolve over time, featuring seasonal and exclusive items.
Rough gave a rundown of several new dishes that appear on the revamped menu at M. They’ve added a pork belly appetizer, cured like bacon and served with a spicy apricot puree, a mix of roasted and blanched Brussels sprouts, a mustard vinaigrette, radishes, and a reduction sauce made with black walnut liquor made by Watershed. It’s then topped with candied walnuts.
The pan-seared scallops are also new, served with king crab dumplings over heirloom tomatoes. They’ve also introduced a Piedmontese filet, seared and served with truffled egg cream, truffle shavings, truffle oil, potato gratin, asparagus, onion petals, and a cabernet reduction sauce.
Rough says to look out for more shareables in both food and cocktail form. Their new M Roll combines hamachi, ahi tuna, salmon, avocado and a crunchy garlic scallion relish.
“It was just time,” Rough says about the menu overhaul. “We’re always changing the menu down here, usually seasonally. We just wanted to change the look and feel of the food, bring it a little more modern, along with the restaurant.”
