Short Order: Tank’s Ironclad Meats
There are days when you don’t want the sides. You don’t want the sandwich either; you just want to dive into a straight-shootin’ big ‘ol pile of meat. And for that, Tank’s Ironclad Meats has you covered. What you’re looking at right here is a half-pound of pure, tender, smoked (with just a hint of salt to leverage that smoky flavor) brisket.
If you want the brisket, though, you have to find Tank’s, and that’s a project in and of itself. Maybe you’ll see its signs on Morse Road. Maybe you’ll follow the signs, and find yourself confused in a parking lot filled with cars, but no meat, or barbecue, or Tank. That’s because Tank’s is actually inside of Brew-Stirs Tavern, a neighborhood bar.
The little barbecue-serving kitchen is tucked in a corner with a menu posted by its order window. Place your order, and they’ll fix you a meal right then and there. It looks a little crazy back in the kitchen, but trust the process.
Of course, you don’t have to order the brisket, although it would be a sad, sad thing to miss out on. There are plenty of other menu item options such as chicken, pork, ribs, sandwiches and sides (including coleslaw, beans, collard greens). It has all the normal things a barbecue place has to offer.
And there’s a sauce selection, too. While personal preference is truly for straight, unadulterated smoked brisket, the house sweet sauce is worth a few dips for variety. It’s got a little sweetness, and a little tanginess, and a fresh-feeling complexity that makes it unusually compelling. There’s plenty of other sauce options as well, including hot sauce. And there’s plenty of time to get to those, too…
