North High Brewing Opens this Week in Dublin
North High Brewing officially opens the doors to its Dublin location on Thursday, July 16.
The brewery lucked into another appropriate address for its second Central Ohio location, taking over the former home of Brazenhead at 56 N. High St.
North High is opening the space in partnership with coworking company COhatch. COhatch bought, developed, designed and built out the space which the brewery occupies.
North High Co-Founder Gavin Meyers says when COhatch approached him about bringing the brewery to Dublin it made sense for two reasons. Not only do a lot of their customers live in the area, but they also supply several local bars and restaurants in the neighborhood.
North High in Dublin will offer a full-service menu of upscale pub fare. Salads, burgers and wings make up the bulk of the menu, and despite sounding carnivore-heavy, there are a number of vegan options. Munchies like house-made pickles and pork rinds round out the menu.
There will be 14 North High brews on tap, with two additional taps pouring wine. Dublin will have beers unique to its location that are not available in the Short North taproom, 1288 N. High St., starting with North High Tides, a raspberry kettle sour that will debut this weekend. Meyers says to expect even more Dublin exclusives as they are able to start brewing up north.
Behind the bar and restaurant is an open lot where COhatch plans to build its coworking office and a brewing space for North High. It’s the first new build for the company which has traditionally sought out opportunities for adaptive reuse. COhatch currently operates offices in Worthington, Upper Arlington, Polaris and Delaware, with a location opening soon at Easton and a partnership announced this week on a space in the University District with OSU.
Working with COhatch has meant some changes for North High’s taproom in the Short North as well. Construction was well underway when the pandemic shuttered bars and restaruants. The brewery used the opportunity to turn Short North into their test kitchen to develop the Dublin menu. Now, eats are sticking around, as a pared-down version of the Dublin menu will be available in Short North. The space also got a makeover to match the new aesthetic COhatch designed. It’s a theme Meyers says they’ll carry over to any additional locations for North High.
While opening a restaurant in the middle of the coronavirus pandemic is not ideal, Meyers believes North High has two two things going for it heading into opening day.
“The space lends itself to be able to accommodate enough people to make it worth our while to open in the middle of a pandemic,” Meyers says.
The building has three floors, as well as the large High Street patio.
They’ve also used the nearly two months since patio and indoor dining resumed to observe best practices and trends and make sure they understand the rules and regulations.
“We wanted to do it right,” Meyers says. “You’ve only got one chance to make a first impression.”
North High Brewing in Dublin will be open daily from 11 a.m. – midnight, with the kitchen closing at 10 p.m.
