    Kolache Republic Opening Retail Store on South High Street

    When we first found out about Kolache Republic way back in November of 2011, we learned not just what a Kolache even is (a puff pastry of Eastern European decent that can be either sweet or savory) but also that this local mobile business had plans to eventually become a brick-and-mortar store. This April, their vision becomes a reality as Kolache Republic opens their doors at 730 South High Street, on the southern end of The Brewery District.

    “A store front has always been our long term goal, but we wanted to make sure we found the right space in the right neighborhood,” said Kolache Republic co-owner Dusty Kotchou. “We spent over a year searching and meeting with agents and brokers before we came across this location.”

    Kotchou, along with partners Rick Jardiolin and Doug Sauer, say that one of the location’s benefits is that it gives the business a convenient centralized placement while remaining connected to area neighborhoods including Merion Village and German Village.

    The new store will serve as both a restaurant and a retail location. It will seat approximately 16 people and feature a menu crafted for take out and pick-up orders. In addition to Kolaches, the business plans to expand the menu over time.

    “We plan to offer several new products such as breakfast kolache and runzas,” said Kotchou. “In addition to baked goods we will be offering a full espresso and coffee menu along with daily lunch specials including soups, salads and sandwiches.”

    Hours are still being finalized, but the store is expected to be open to customers from the early morning through the mid-afternoon Monday through Saturday, and may expand to include Sunday hours in the future as business continues to grow.

    “While we may not be the only bakery in Columbus offering kolache, we will certainly be the first ‘kolache bakery’,” said Kotchou. “We look forward to reconnecting with our customers that supported us through farmers markets and special events over the past couple of years, as well as meeting new ones.”
