The wait for Fox in the Snow German Village is almost over as the shop prepares for an opening this Saturday, January 6. The bakery and third wave coffee shop opened its first location in October 2014 in Italian Village and announced its expansion two years later, soon beginning construction in a space near STUMP and Native Cold Pressed on Thurman Avenue.
Co-owner Jeff Excell said the neighborhood is a perfect fit for Fox in the Snow, a shop he hopes can bring in “all walks of life” from German Village and Merion Village.
“We live in Merion Village. It’s great. It’s kind of exactly what I love about the first Fox in the Snow,” said Excell, who runs the shop with baker Lauren Culley. “It’s a perfect mix of people, you know. You have very expensive, nice houses a block away; you have Merion Village, which is a great mix of young people and blue collar people and people from the hospital, the Children’s Hospital. I love having all those people in our shop.”
“We never want it to be like, an exclusive hipster shop or whatever for college kids,” he added, “so I feel like this neighborhood is perfect in that sense.”
The space itself offers a lot as well, he shared. While maintaining roughly the same number of seats as Fox in the Snow Italian Village (60 or 70), it’s double the size of that original shop and provides a large, accommodating production kitchen. Excell imagines that, as Fox in the Snow adds more locations, their German Village kitchen will keep them stocked with pastries.
While expansion is definitely in the plans, Excell said the focus is on making sure this German Village location is a success.
“We want to make sure this one works. We’ve never duplicated our process, so we want to make sure this is a successful shop,” Excell said, “but we don’t have any intention of stopping. We have our eyes towards more for sure.”
