    Recently made some steaks

    Used Gordon Ramsay’s method

    Last step was to throw it in the oven at 450 for 6 minutes to bring it to meadium/rare.

    As an experiment I reduced some Laurelville cider down to about 1/3 its original volume, and spiced it with cloves and cinnamon, with a lot of brown sugar. It smelled and tasted like liquid baked apple.

    I mixed that in with some spiced butternut squash puree, and that mix went into a batch of muffins this morning.

    That is, I think, the most beautiful beef wellington that I have seen; and I know from beef wellington. If it tastes a fraction as good as it looks, you have achieved not just success but triumph.
