    I’m going to start hanging around the mayo salads at parties and waiting for the excitement when hammered people start tearing into ’em after they’ve been sitting out 6 hours in 80-degree heat.

    Health Department food codes are written to be overly strict and cautious. Their job is to protect the public. They do a good job at that.

    Ever left a pizza in a box on the counter over night, eat it it the morning, and not get sick?

    Been at a picnic where food sat out for more than four hours in the “danger zone” and not get sick?

    Exactly.

    Thought so.

    The codes protect against what ifs, and yet in most domestic kitchens the what ifs happen alot, yet there are not thousands of people running the hospital with food poisoning.

    So enjoy your german potatoe salad at 50 degrees, you are more than likely, probably, as near as we can guess, and hope and pray be fine.

    This is fascinating and all, but there is no mayo in German potato salad, and is made to be served warm/hot.

    German “Kartoffelsalat” is a popular variation that is generally prepared with vinegar and oil, rather than mayonnaise, and bacon bits and served warm.
