    First Look: The Bar at Echo Spirits

    On Saturday, December 5, Echo Spirits Distilling officially opened up their bar to the public at 985 W. Sixth Ave. Dubbed “The Bar at Echo Spirits,” the space offers the local distillery a place to showcase cocktails made with their signature products, which they began selling earlier this year.

    Echo Spirits was conceived by owners Nikhil Sharoff and Joe Bidinger with a unique product focus. The current lineup includes Rum, Rye Whiskey and Genever — the latter being an older cousin of Gin.

    “Genever, I think, is by far the most complicated spirit to make, and, yes, we knew that getting into it, but we still decided to do it and I don’t know why other than it’s fun,” Bidinger told CU Associate Editor Susan Post during an interview in November.

    The Bar at Echo Spirits features several COVID precautions including touch-free menus and outdoor seating with heat lamps, but for those who want to stay even safer, the bar has both to-go cocktails as well as an attached retail store for grabbing a bottle to drink in the comfort and safety of your own home.
