    Favorite Holiday Recipes: Barbecue Tofu Scramble

    We’ve sought high and low throughout the city to find cherished holiday recipes from a few locals who are making a big influence in their community. What we’ve come up with is a comprehensive list of recipes for you to try this holiday season whether it be vegetarian or carnivore friendly:

    Barbecue Tofu Scramble (Vegetarian)

    Makes 3-4 servings

    Ingredients:

    • 1 square/container, Extra Firm Tofu
    • 1/2 container, Trader Joe’s Steamed Lentils
    • 1 package, Trader Joe’s Beef-less Ground Beef
    • 1 container, Barbecue sauce (recommended: Trader Joe’s Carolina Gold or Trader Joe’s Bold and Smoky Kansas City Style Barbecue Sauce)

    Directions:

    1. Heat up the Beef-less Ground Beef in a pan. (season as desired)
    2. Add 1/2 package of lentils to the Beef-less Ground Beef
    3. In a pot, “scramble” the tofu. (Recommendation: Cut the block in half and smash/scramble half a block at a time)
    4. Place scrambled tofu in a pan and heat up until desired. (season as desired)
    5. Add Beef-less Ground Beef and lentils mixture to tofu and scramble together. Feel free to scramble together in 2 pans if it’s more convenient.
    6. Add barbecue sauce to the tofu scramble as preferred!

    NOTE: Add enough to slightly change the color of the tofu, ultimately it’s to your preference.

    Tips:  

    **Morningstar Crumbles can be used in place of the Trader Joe’s Beef-less Ground Beef

    **The tofu scramble is great on top of a salad, particularly spinach or iceberg lettuce. Create your salad as normal and simply add the scramble on top.
