Barbecue Tofu Scramble (Vegetarian)
Makes 3-4 servings
Ingredients:
- 1 square/container, Extra Firm Tofu
- 1/2 container, Trader Joe’s Steamed Lentils
- 1 package, Trader Joe’s Beef-less Ground Beef
- 1 container, Barbecue sauce (recommended: Trader Joe’s Carolina Gold or Trader Joe’s Bold and Smoky Kansas City Style Barbecue Sauce)
Directions:
- Heat up the Beef-less Ground Beef in a pan. (season as desired)
- Add 1/2 package of lentils to the Beef-less Ground Beef
- In a pot, “scramble” the tofu. (Recommendation: Cut the block in half and smash/scramble half a block at a time)
- Place scrambled tofu in a pan and heat up until desired. (season as desired)
- Add Beef-less Ground Beef and lentils mixture to tofu and scramble together. Feel free to scramble together in 2 pans if it’s more convenient.
- Add barbecue sauce to the tofu scramble as preferred!
NOTE: Add enough to slightly change the color of the tofu, ultimately it’s to your preference.
Tips:
**Morningstar Crumbles can be used in place of the Trader Joe’s Beef-less Ground Beef
**The tofu scramble is great on top of a salad, particularly spinach or iceberg lettuce. Create your salad as normal and simply add the scramble on top.
