Northern Exposure

As the days begin to grow shorter, we begin to think of cooler weather approaching and more hearty, comforting dishes that accompany it. Welcome to Canada, our neighbors to the north. Being influenced by French, British and Native American cultures, Canadian cuisine has developed into an interesting fare all its own characterized by unique flavors and the use of local ingredients. We begin our journey with a butternut squash apple and cider soup, popular in the Alberta region. Next, we move west to Quebec where Poutine is king! Poutine, a dish that is composed of fried potatoes and cheese curds topped with a brown gravy, is as unique as it is delicious! Finally, we finish with a Canadian favorite, a smooth and silky maple syrup pie.
