Not one, but two new bars will be opening up Downtown in mid-October with the introduction of Denmark on High and The Secret Cellar, both located inside the Yankee on High building next to the Convention Center.
The two bars will share an entrance to a stairwell that will lead up to Denmark on the mezzanine level, or downstairs to the Secret Cellar in the basement. The Cellar will function as a beer, wine and snack retail shop with a private event space that can serve up to 50 guests. Denmark will open as a modern cocktail lounge featuring upscale bar snacks, handcrafted libations, and a wall-to-wall window view looking down onto High Street below.
Managing Partner Daniel Morris describes both venues as separate but complementary to each other, and to their surroundings.
“We want to be a place people go before dinner, after dinner or in lieu of dinner,” he explains. “We know we naturally will have a lot of out of town guests being close to the hotels, but we really want to tie into our neighbors and our community.”
To achieve that, both venues will focus on local products. Food items for sale will be made from North Market ingredients when possible, and Denmark’s only domestic beers will come from within the state of Ohio. Another feature that cocktail aficionados may take note of is a lack of soda guns and premade mixes, meaning that all drinks feature fresh ingredients made from scratch.
“We describe our approach as vintage without being literal,” said Morris. “But we also want to be modern without being space age.”
Both bars are currently targeted for an October 16th opening date, with Bareburger opening a month afterward on the first floor of the building, and the building’s first residents moving into their apartments within the next few weeks.
