Craft beer and good wine. These two building blocks form the base for The Cask & Barrel restaurant and bar that co-founders R. Spenser Hanson and W. Brian Kilbourne are bringing to the Polaris area this winter. The duo have a background in the restaurant and service industry, but The Cask & Barrel marks their first venture into ownership.
“The desire to open this establishment originated with the desire to bring to life an establishment that had an equally extensive selection of both craft beer and good wine,” says Hanson. “After spending a few years visiting similar establishments, keeping ideas that worked well and staying away from those that didn’t, we came to the comprehensive concepts of on-premise and retail craft beer and wine, quality food and educational tasting experiences that we have established today.”
The new business will be located in the former Claddagh Irish Pub location at 8745 Sancus Boulevard, which offers 7,800 square feet of space to showcase 400 bottled craft beers, 30 more craft beers on tap, and over 100 retail wines.
“Draft beers will be categorized by local beers, seasonals, breweries, staples and specials such as meads, ciders or lambics,” explains Hanson. “Draft beers will also be offered by the growler.”
To complement the extensive drink selection, The Cask & Barrel will feature an American tapas menu with a focus on healthy high-quality appetizers that encourages a communal dining experience.
The restaurant is expected to open in early December, and be open for business seven days a week from 11am to 11pm. A 1500 square foot patio is also expected to open in the Spring.
