Kolache Republic is the city’s first kolache shop, tucked in the Brewery District at 730 N. High Street. Back in 2010, Owner Dusty Kotchou and his parters Rick and Doug were inspired to open a kolache shop after eating the traditional Czech pastry in Texas, where there’s a large Czech population. Kolache Republic opened in summer 2013. Their dough recipe and filling ingredients are locally sourced, and made completely from scratch.
So, what exactly is kolache? A slightly sweetened yeast dough filled with various soft center fillings (usually fruit, nuts, and cheeses), and baked until golden-brown. The end result is a pan of fresh, square-cut pastries akin to a dense danish. At CU’s Best Bites event next week, Kolache Republic’s samples will include Sweet Cheese, Chocolate, Cranberry-Orange, and Blueberry Sweet Cheese. An Artichoke-Spinach kolache will also be served, as a savory break from the rest of the sweet kolache.
