    Yabo’s Tacos Sets Sights on University District, Short North and Beyond

    Yabo’s Tacos opened their first location in Westerville in mid-June, and the owners have already got their sights set on quick expansion.

    “The Westerville location is killer with lots of traffic and great demographics for our concept,” explained Scott Boles, Co-Owner and Operations Director at Yabo’s. “Our plan is to try to do seven locations in Central Ohio in five years.”

    The fast and fresh pseudo-Mexican concept behind Yabo’s is designed to appeal to a wide demographic across multiple types of neighborhoods.

    “We want to appeal to women with our healthy options, we want to appeal to moms because we offer better choices for kids, we want to appeal to men because we always have a retro draft beer for $1.00, and we want to appeal to kids of all ages because we’re affordable,” explained Scott.

    Menu items include traditional Mexican and Tex-Mex staples such as tacos, burritos and quesadillas, but many ingredients have an American flare. Pork shoulder is slow roasted in a North Carolina BBQ style and the “Sloppy Yabo” is described as more of a ‘Philly Cheese Steak in a tortilla’.

    The next Yabo’s location will be open this October in Dublin. Additional stores to open beyond that are still under consideration.

    “We’re watching the campus area for just the right spot, and the Short North would work too,” said Scott. “We’re also watching a couple locations in Hilliard as well.”
