The Chocolate Passion Fruit Coconut Tart has only been on the menu at Pistacia Vera for a few weeks. As all of their items are, this tart is very beautiful. Planning on chocolates and flowers for Valentine’s Day this year? Upgrade to this chocolate dessert. Its base is a cocoa shortbread crust made with 70% chocolate ganache and toasted coconut. Next comes a delightful layer of passion fruit curd, then a thick layer of chocolate mousse. It’s topped with 11 raspberries (which guarantees you’ll get one with every bite), nestled on top of a bit of preserves and toasted coconut. On top rests and beautiful and delicious 1/2″ cube of Passion Fruit Pâte de Fruit and a little extra chocolate garnish.
The cocoa shell serves well as a neutral vessel for all of the flavors going on inside it. The mousse is a rich and creamy chocolate. When bits of passion fruit pop through they provide a nice tropical flavor. These tarts are three inches across and an inch tall and are sold for $6, or you can get a larger version for $35.
