Co-owner David Kim said the restaurant is focused on healthful food items inspired by Hawaiian and Californian poké appreciated by him and business partner Seas Kim.

Their finalized menu features four specialty poké bowls. The Garden is vegetarian, while the Pokébap, the Island and the Volcano contain a variety of proteins — tuna, yellowtail, salmon, octopus, spicy baked fish salad, and tofu.

Or guests can create-their-own; first they pick their base: bowl, burrito or salad; from there they choose from the six proteins; then a “mix” is added, which can be made from cucumber, mango, scallions, edamame, seaweed salad and other ingredients; at the end, they can top it off with their sauce and garnish.

David Kim said in addition to Coke products, a selection of bottled sodas and teas, coconut waters and aloe drinks will also be available.

He said they are still looking to hire, but they’ll be operating short-term with a three-person staff. They’ll serve up to 40 people in the 1,800 square foot space at 7561 Sawmill Road.

After a friends and family gathering this Wednesday, David Kim said doors will be open to the public on Friday. From then Pokébap will be open Sunday through Thursday, 11 a.m. to 9 p.m. and Friday and Saturday, 11 a.m. to 10 p.m.
