The Downtown restaurant scene continues to blossom with new options with the addition of “Manifesto” in November. Located at 21 East State Street in the Fifth-Third Building, this new venue is being described as a “rustic Tuscan Grato and full scotch bar” by owner Yavonne Sarber, who also owns de-NOVO Bistro and Bar located just two blocks away on High Street.
“Our scotch bar will be extensive with knowledgable bartenders serving proper methods,” said Sarber. “We hired Todd Adam from Hyde Park who is an expert on everything scotch — hopefully we’ll have the best scotch list in town with a lot of small batches.”
Sarber describes the decor of the new venue as both beautiful and manly.
“Being right in front of the statehouse provides such a beautiful view with all windows in the front,” she said. “We’re also going to add a patio out front once the city approves the variance.”
Manifesto will seat 90 guests and will be open from 7am for breakfast through 1am on weekdays and 2am on weekends. The culinary team for the new restaurant includes leadership from Chef Robert Harrison, executive sous chef Mike Gadd, and sous John Franke.
