Eat scene: Why Columbus is the perfect city for food trucks

It’s taken Columbus a while to get here, where a mobile kitchen in a beat-up parking lot across from a bar can qualify as one of the biggest restaurant openings of the year. Now, with about 70 food trucks making the rounds in the city, “waiting in line for an hour” has become the new “impossible to get a reservation.”
