Some of my favorites I almost never order in bars or restaurants since they are usually a mess.
Champagne cocktails like a French 75 are probably my favorite at the moment. Good luck on finding those. Hyde Park at the Cap did a good job for me.
Mojitos have been ruined as now you have to find out if they use some abomination of a mix or muddle it.
Tip Top makes a very good Old Fashioned. Only place in town.
Nobody can make a Manhattan.
Nobody has the ingredients for an Aviation.
Sidecars, both traditional and nouveau, have made a comeback which is nice. They will be ruined by next year.
My goto drink - which is not my favorite - will be a martini. Preferably gin, but not if the gins are poor and the vodkas better.
Campari and soda is very nice, if they have Campari.
I am really picky about my spirits, so I will get a beer. If they have any decent ones.
I usually end up with sparkling water.

My favorite Ambrosias include the Sazerac with Rip Van Winkle family reserve rye or Caipirinhas. Anyone making a trip to the Party Source anytime soon?

I tend to stick to non-mixed drinks, so usually my order of preference is:
Beer (if they have something good to great)
Scotch, one ice cube (if they have Johnnie Black or better)
Makers, one ice cube
then it depends on the company I'm with/ time of the year.
Summer = Top shelf margarita. Rocks
then Mojito
Winter = Bombay Dirty Martini Olives stuffed

I really enjoy Bombay Sapphire Martini's and after dinner Sambuca con mosca warms my heart. I must say I love wine Amarone Valipocella, Grenache-Shiraz-Mouvedre and this awesome $10 bottle from the Rhone region I had at someones house...have to find the name...nice.

How do you like your Manhattans made??
It is one of my favorite cocktails. When I make on at home, I usually use the following:
-about 2.5 oz of Jim Beam
-about 0.5 oz of sweet vermouth
-a dash of bitters
-a maraschino cherry (and I like to add about a teaspoon of the cherry juice)
I like it served in a rocks glass packed with ice.

I think is the same as the "favorite pizza" thread for me. It really just depends on the mood. :D
I have been ordering a lot of Black Russians lately though. Sometimes with Vanilla Vodka instead of regular Vodka. Since very few people order them, I've found that a lot of places will charge you the same for it as they would any other mixed drink even though there's no mixer in it.

I was just there a couple of weeks ago. What are you looking for?
I know a guy who runs a wine/booze shop in Santa Monica. He regularly goes to Brazil to visit his girlfriend and arranges to import really, really good cachaca.
Used to drink Sazeracs on an all-too-regular basis at the Napoleon House in NOLA. Called it lunch.
