I have been stopping by Kroger right after work lately and have been able to get some good manager specials. Last night I got 2lbs of salmon, Fresh rosemary, Basil, and portabella Mushrooms Stuffed for about 8 bucks.

We made a special trip to Kroger tonight for their $1 raspberry pints. Anne loves em.
If you're looking for a good cheap dessert item, I also picked up a few plantains (69/lb). They're a little annoying because they're always so green at the store and it takes a week for them to turn black enough, but when you slice them up, sprinkle with some cinnamon & sugar, and sautee them in a little bit of butter... man oh man... good stuff.
We mostly just got other odds and ends tonight. Nothing really planned-meal-worthy. Although I'll probably make some pizza dough this week. Cheap and easy and fun. Just takes a little time.

Also, I like to make homemade mac & Cheese. oven at 375. boil your pasta *maybe about 1/2 a box, I think they are 16 oz usually?). combine pasta, 1/4 c. flour, 3/4 cup milk, salt, pepper, peel and slice up a small yellow squash, 1 can of diced tomatoes, some corn, dice a small onion, 8 oz. colby/monteray jack cheese. I think that is everything I usually put in. Stir, dump in 13x9 baking dish. Place small slices of butter on top, sprinkle with breadcrumbs. Bake uncovered 30 mins. It is also good to put sausage or pieces of cooked ham in it as well.
but yes, as walker said earlier, my meals for the next couple of days will be consisting of raspberries. haha

Yeah, that Mac & Cheese can do no wrong. Anne's thrown just about anything imaginable in it and it always turns out awesome. :D And it makes enough for some tasty leftovers for a few days.

I mix up my shopping cart to fight boredom ... by which I mean I get different kinds of cereal every time I go to the grocery store.

I just go to allrecipes.com and plug in a meat we have in the freezer and it shoots me tons of different recipes and I save the good sounding ones to my "recipe box." I found a good recipe for acorn squash that uses peach marmalade--very easy and very good.

This is one of the reasons I really like Trader Joe's, because they've frequently got new and tasty looking things on the shelves. (Also one of the reason that I really dislike Trader Joe's, because they frequently discontinue my favorite things.) By the way, if anyone has any ideas for what to do with soy chorizo other than scramble it in some eggs (which was delicious), I'd love to hear them.

I forget the name of it, but apparently it's a spanish breakfast. She warmed four tortillas and then added refried beans, scrambled eggs, salsa, green peppers, onions, and cheese. I thought some sort of meat would have made it perfect.

With a few of the same basic elements, you can turn many meals into a Mexican- or Vietnamese- inspired dish. Lime, scallions, avocado, cucumber, fresh hot peppers, cilantro. Then add sesame seeds or oil, rice wine vinegar, ginger and/or sriracha for Vietnamese dishes or cumin, radishes, tomatoes and/or garlic for Mexican dishes. Works for fish, chicken, salads, pasta, pizza, hummus, etc. Fresh flavors make the difference.

Lately, we're eating salad -- whatever is fresh or interesting when I go shopping. Makes quick and easy and is cool. Oh, and eggs -- using lots of hard boiled eggs.

You cannot go wrong with a summer salad. Try putting anything you have in it and top with a balsamic vinegarette. Some favorite additions (to your greens, tomatoes and cukes): peas, corn, strawberries, nuts, cheese(any), dried fruit, cooked chicken or tuna, spinach, cooked pasta, hard bolied eggs etc.

I like the salad idea. When I'm too busy to cook, I fall back on frozen chicken fuggets or Boca burgers. Not enough fresh produce. Lately I've been spending a little more $ on pre-made dressings and sauces (North Market's Pastaria!!) that can jazz up my produce without much effort. That seems to be a good tactic, and turns out to be cheaper in the end.

I've been buying and breaking down my own sides of beef lately to save money. The best buy right now is less than $80.00 yields 16 choice filet mignons. I don't weigh them, but they aren't small.
I try to do variety too, but with the kitchen in a constant state of renovation here I find myself caught in the microwave dinner rut most often.
