Headed to Buffalo, NY this weekend for a wedding, and planning to stay on a few days and have some fun.
We've both done all the Niagara Falls tourist traps already.
We like: Nature-type things (hiking, climbing, etc.), art, all things quirky, and exceptional food and beer.

The hiking is a bit east of Buffalo at Letchworth State Park. Lovely gorges.
For quirky and independent art there's Allentown, and Elmwood Avenue also offers quirky shops and dining.
If it's chicken wings you want, Duff's is the answer.
The Albright-Knox is an exceptional art museum.
Decent local beer is available in the pub like setting of the Pearl Street Brewery. One of my favorite bars is Ulrich's at Ellicot and Virginia, oldest bar in the city.
Have a fun visit. Summertime there is lovely.

I'll actually be at Letchworth on Saturday or Sunday the weekend of the 20th.
It is a great place, but getting acquainted with the trails can be difficult for the best views.
This trip I am going to be parking up near the traintracks upstream from the upper falls and crossing over deeper into the park from there.
I had a great time there a couple of months ago.
If you want to stop by for a hike and then a drink back at the cottage, you are more than welcome to.

As far as food goes, I recommend Salvatore's Italian Gardens. If that's in your price range.
Oh, and the ambiance there is kind of quirky. But it's a pleasant quirky.
