CBS Sunday morning had a segment featuring that roasting box this am. I think you may be able to rent them. They are badass!
I'm makin a beef roast on the rotisserie now, with mexican adobo sauce for tostadas. Then a fresh cream corn with toasted cumin butter.
Tomorrow is BLT's. Wallace garden grown Brandywine and Rainbow heirloom tomatoes with medium cut bacon from a hog I once met in Licking county.
While a BLT is easily a meal, what do
YOU serve with it? I like sweet corn & baked beans, but I'd like some new ideas. BLT= awesomenesses.
We decided BLTS are the perfect camping food. Pre-cook the bacon and wrap it in a paper towel and put it in a plastic bag the cooler. Same with lettuce, stays fresh for several days in the paper towel plastic bag combo. When you want a sandwich, slice up tomatoes, build your sandwiches. So so excellent with some Combos (we are camping mind you) and a beer.

Since I have quite a few zucchini, it will have some pan fried zucchini. Salt, pepper, garlic, basil, then flour/egg wash/fresh bread crumbs in olive oil.
Slaw, baby!
There was an awesome article on slaws in the NYT magazine by Bittman last September. His take on the traditional cabbage slaw uses a touch of barbecue sauce in the dressing. Great carrot slaw with raisins and a yogurt/curry dressing. Kohlrabi slaw with sesame ... Assuming you are car camping, not too tough to schlep it in the cooler.
My family adores "barbaslaw". What a great combination.
Made zucchini pancakes twice this summer, but it's nice to not have to heat up the kitchen too much when it's already hot.
I like my zukes off the grill ... drizzled with olive oil, sea salt. Ditto eggplant. I am in mourning as the one zucchini plant I could fit in my garden gave up the ghost a couple of weeks ago after just delivering a couple of young fruits. Dunno if it was the heat/drought or infestation. Just my 2d year gardening in Columbus so I'm still experimenting.
