Let's say I was entertaining an out of town guest the weekend of October 15-17th. Where would you take them?
The said guest is a vegan at home, but eats vegetarian in restaurants, into fuzzy guitar music and dive bars.

I'd go for Tip Top as one of my choices. It's probably the most veggie friendly of the Betty's Family (unless a veggie dog is the major craving) and has the feel of an old-timey bordello without the grime. It's where I'd take the vegetarians in my own family.
Banana Leaf on Bethel would be a good choice for vegetarians, if they are into Indian cuisine.
I'd absolutely hit Dragonfly-V. Not my cup of tea, but a nationally recognized restaurant with a mostly vegan menu.
I would take them to the Circleville Pumpkin Show. Fun atmosphere, plus most of the food is pumpkin-based.
For a different take on Columbus:
Gothcoming is at Skully's
Synerfest is at Outland
If I was trying to impress an out-of-town visitor who was vegan, I would absolutely take him or her to Dragonfly --as Core said, it's considered one of the best vegan restaurants in the country.
Or, if --like me-- you have a budget that can't accommodate Dragonfly, take 'em to On The Fly, Dragonfly's downscale sister restaurant. That's what we did when my wife's vegetarian cousin came to visit and she loved it.
My other standby for a vegetarian visitor is Bangkok, because they will make anything vegetarian on request, so carnivores and vegetarians can both have excellent meals together there.
As far as general places to visit, my current list of local attractions includes The Wexner Center, The Short North, Used Kids' Records, Inniswood Metro Park and MoMo2.
Not that I ever actually get out of the house any more.
As far as the nightlife, I haven't been in years, but doesn't St. James Tavern host live bands? Someone who is more current on the live music scene chime in here, please.
Tip Top will be good. Definitely has the Ohioana vibe as well. We'll do the obligatory Jeni's visit, maybe hit Middle West spirits and then just hit my favorite bars. Any other vistor attractions I'm forgetting?
Cafe Bella's eggplant parm is to DIE for.
