Pies top 2011 restaurant trend list

Andrew Freeman, whose Andrew Freeman & Co. of San Francisco consults on marketing for restaurants and hotels nationwide, detailed some top trends in a webinar Wednesday.

As much as we discuss food on CU, I thought this would be a great topic for discussion. Anyone think that certain trends or ingredients on this list sound like something we'll see being hot here in Columbus in the next year?

I think the 2011 trend in Columbus will be established restaurants creating their own food carts.

I like pocket pies. They are cute and fun.

I imagine some more of that will happen, but I've also heard of it going the other way. At least one food cart/truck owner I know of is looking to sell their mobile equipment and move into a dedicated restaurant space. I imagine others want to do something more permanent and are using the food cart as a low-cost stepping stone toward that goal.

I'm curious as to what other sorts of plans food cart/truck owners have for the winter. Some of them have other jobs, and some may turn to catering, so the food cart scene is going to be pretty dead from December to March-ish.

As a reformed cupcake queen, I have started transitioning to pies and tarts due to a lot of people asking me for them. I worked on a chocolate toffee bourbon pecan tart last night that was really heavenly! I hope to see more tarts in restaurants in the future.

When I lived in San Francisco back in 1994-7 there was an amazing pie shop called "Tom's Peasant Pies". They were little savory pies that sold for around $7. They were so tasty! I would love to have something similar here.

IÃ¢â‚¬â„¢ve had 2 lb. of leaf lard in the freezer a while, waiting for the weather to cool off, so I can render it (it takes a few hours) My favorite fat for flaky crust-for carnivores...

Interesting! I was just telling Lew I needed to track down some beef lard for fried pies. Would love to try this out one day.

I'd be willing to bet that cured meats and charcuterie as a whole is at the beginning of a new renascence. I'm guessing we will be seeing more and more offerings. Bacon last year, prosciutto this year and coppa, lardo, bresaola all coming up. I see it as just an extension of increasing interest in traditional foodways.
