I was watching "How the States Got Their Shapes" on the history channel and the host (a Dayton native) visited Columbus and asked this question.
The segment started with the premise that Columbus, like many other newer compromise capital cities, was more a political creation and therefore a bit generic. It then went through the 'give Columbus a slogan' montage (ie " Columbus - Not another cornfield") schtick.
Finally the host interviewed Mayor Coleman who answered the question with 'Jeni's'.
They cut to the host eating ice cream with the mayor.
