This would be a great time to visit my buddy in Athens - I wonder if Paw Paws are still in season at that time? There's a Paw Paw Festival, too. It's Sept 19-20.

I wish they had a smoked fish category. Smoked trout and salmon - good stuff.

2. I officially volunteer for guinea pig food tester duties whenever necessary. I'll even bring beer. I might even bring you somethin' fancier than Peebers.
I think guinea pig food goes better with wine than beer.

I smoked wings once and just got a headache.
Aren't wings hard to roll or do you use the big papers?
I've done wings on my smoker and they aren't overly difficult. Probably one of the quickest things you can cook on a smoker too. I like to pop mine up in a fryer as I am partial to crispy chicken skin on my wings.

You may want to invite Joshua DiBari (New Columbus Chefs) over for some of that smoked stuff. He's a fan of smoked meats too. He may have a few pointers for you.
