No. this is one of my biggest disappointments with our dining scene. we really, really need a noodle bar. actually, i would love a late-night noodle cart.
I wouldn't classify it as "really good," but we do have Oodles on Neil-
You can also get a good noodle fix at Pho on Lane Ave.
Admittedly, these options are nothing like you'll find in larger cities.

None that I know of.
I'm curious: what about the interview interested you in Chang's noodle bar?

Just hearing them talking about it made me want to go to a good place like that - and then I started thinking that I don't know of any good noodles spots locally. My thinking had already been heading that way also because I recently saw an episode of Man vs. Food where he did a Ramen challenge in LA that looked really good.
Japanese Oriental Restaurant near N High St and Patterson has some good Udon noodles as well as sushi rolls. I know its not quite the same as a noodle bar but it might get your noodle fix.

I hear that a lot and it kind of puzzles me. When people say "you won't find X here like you would in larger cities" they seem to have not just NYC but cities like Boston, Seattle, and New Orleans in mind. But those three actually have populations that are smaller than ours.
Anyway -- no, haven't found any particularly rave-worthy noodle places, certainly none that have the sort of rep that Chang's does for maniacal focus on the best ingredients.
Try Sushi Bistro Masa in Dublin. They have some decent options that help satisfy your noodle cravings.
