I would have to say it's probably "Monty Python and the Holy Grail" with "Princess Bride" as a close second. What do you think?

"Treasure of the Sierra Madre" is probably the most quoted movie from which people have no idea what movie they are quoting. (a circuitous way of saying people probably don't know where the "stinking badges" quote is from)

Muppet Movie. I find weird ways to quote that movie all the time. Of course, I think I AM part Muppet, so that might explain a lot.

I doubt it's the most quoted movie of all time, but I still get a lot of mileage out of "Cool Hand Luke", specifically:
"Stay down, Luke!"
"Wish you'd stop bein' so good to me."
"Callin' it your job don't make it right, Boss."
...and of course...
"I'm shakin' it Boss! Still shakin' it Boss."

(a circuitous way of saying people probably don't know where the "stinking badges" quote is from)I agree that those are two super-famous quotes, but I don't think they're the ones that people go around quoting a lot.

Above ones all good. I probably draw on Monty Python and the Holy Grail the most. Here's some quotes I've used quite a bit, although maybe not the most quoted movies:
Hey Bud, let's party! from Fast Times
People on 'ludes should not drive. from Fast Times
What a week I'm having! from Splash
Looks like I picked the wrong week to quit <fill in the blank> from Airplane
To make a long story short....Too late from Clue
AhahaaaaaI like it. from Modern ProblemsPosted 2 years ago # -
Stupid is as stupid does life is like a box of chocolates run forrest run JENN-AHYE
Maybe not the most quoted, but seems to be up there in terms quotability and memorability.
