You might already know this tNOTb, but it's more important that there are no preservatives (potassium sorbate [my auto correct insists it's potassium sir ate]), than lack of pasteurization. I think Riffe's has untreated cider, but I don't know if it has a suitable tartness for your taste. The Winemaker's Shop has a really nice cider press, if you have access to apples that suit you. It's BIG, so people take the apples (and jugs/buckets) there. You might want to take some bourbon for mixing (discreetly), too.

racheltb: What kinda yeast do you use? (if any) and how long do you ferment? Do you add any additional sugar or honey? I'll have to drop a finished bottle by as thanks.
