I am an insanely good baker... I would open a bakery and sell to Black Creek.
A Hard Rock Cafe of course to put Columbus on the national / world map.
Obviously, I would donate wall space to local artists and events in town.
I wish I could open something like the French Laundry or Michel Bras. Alas, the ability of Columbus to sustain the price point and the availability of quality local ingredients isn't there yet. I will say that especially in the latter, we have a looooong way since I first had this dream years ago.

I think the ability of a Hard Rock Cafe to put a city on the map passed a LONG time ago. There are just way too many of them around already. There are places on that list (in the US even) that I've never even HEARD of - Destin, FL? Mashantucket, CT?
Besides, we already had Planet Hollywood, and that didn't go particularly well...

Not quite the same as the place you've linked, but you should try Pink Moon Cupcake Bakery up in Powell. They have very tasty cupcakes & some pretty fun flavors.
Authentic Spanish Tapas Restaurant.
A cheesesteak/hoagie/pizza joint (no franchises/chains allowed!) that imports Amoroso rolls straight from south Philly, offers cheese whiz for your steaks, serves roast pork sandwiches, has free delivery until 2am, and pizza like you just grabbed a slice on South St.
And as a nod to Village Coney, we'll include a Tasty Kake (butterscotch krimpet or kandy kake) for dessert w/ every meal!

I once auditioned for a McDonalds commercial with Mr. Belding. It was pretty sad.
As for the restaurant.
