I am preparing brunch for approximately 30-40 people in a few weeks. Looking to spice it up from the usual bagels/lox/cream cheese, and was considering a mexican-themed brunch? I know there are lots of foodies on this board, so please respond with interesting ideas!
So far this is what I'm thinking:
frittata
enchilada casserole
guacamole
P.S. I was not going to serve any meat at this meal (it needs to be Kosher, so I'm just ruling it out altogether). Fish is OK, shellfish is not.
