and for those of you who love European style cultured butter, take my advice: buy some good unhomogenized heavy cream (such as Snowville Creamery, available at Greener Grocer, Cville Co-op, Hills, etc - my friend works there, so I'm supporting them). Anyway. Put a cup of cream in a jar and add a big spoonful of plain yogurt and stir or shake lightly to compbine the two. Allow it to sit in a warm spot for 48 hours. Whip and strain off the buttermilk. I promise you. You will not be disappointed. It might change your life. I gained like 4 pounds in a week putting this butter on everything which came my way.
