if i remember you peal the potatoes, boil them, slice them into fries, and cover with olive oil and salt, and then bake them?
thats how i always did it, would never eat at northstar so i cannot tell you how they make them.

2) Order takeout sweet potato fries (and salmon fritters)
3) Upon arriving at home, place sweet potato fries in presentation dish
4) Pretend you made them

it's hard to make really great fries of any kind at home. Great fries require soaking and double frying at 2 different temperatures. Sweet potato fries are extra hard because it is very hard to get them crispy. I recommend buying the Alexia brand frozen ones and baking or frying them at home. All of their fries are pretty tasty.

that being said... peel and cut your potatoes. rinse and pat dry really, really well. Sweet potatoes don't have a lot of starch so you probably don't have to soak them. fry at a low temperature, like 275, for about 12 minutes. Then spread them out in a single layer on paper towels. Cool to room temperature, and heat oil to hot, like 375, and fry them for another 5-7 minutes or until they are crispy and lightly brown. salt immediately.
Be sure to fry them in really small batches and check your oil temperature very frequently.

I've always heard the trick is to boil them first. Supposedly the water/starch content of sweet potatoes necessitates boiling them first and cooling them to get some of the moisture out. THEN bake or fry to make them crispy.

Mrs. 0Angle says she prefers them to the Alexia brand, but they come in like a 14 lb. bag...

I've been munching on these all week and they are tasty!! They come out to $0.66 per serving so not too bad - I just wish the serving was TWICE as much, haha.
