It'll save you the time of reading what I have to say; it's better to experience it first hand anyway. Right? After all, the goal is to have you go try it after reading this review. So, cut out the middle man and get to it.
Although it's been open for a while, and already received several rave reviews, last night was the first time I had the opportunity to venture up to Fito's on campus to sample their Peruvian chicken for myself.

We got there about 6:45 and was told that they only currently had 1/4 of a chicken left, and that while they were making more, it would take about 45 minutes before they were ready. That could be interpreted as either good or bad, I chose to chalk it up to them being even more popular than planned, so they just can't keep up with the demand.
It was ok, though, as I was only planning on a 1/4 chicken. My dining companion was planning on getting their ceviche, which was the evening's special.
The 1/4 chicken combo was a good deal at $7.99. It came with a choice of side salad, fries, the chicken itself, and a dipping sauce made in part for aji peppers.
The salad was surprisingly good. Usually I expect such salads to be little more than a second though. However, the Greek salad I received had a copious amount of feta cheese, fresh tomatoes, plenty of red onions, and some olives which I didn't eat cause they're really not usually my cup o tea.
The fries were pretty standard frozen fries, but ones that were well cooked and nice and hot. They appear to use kosher salt, which actually went a long way to improving what could be a standard menu filler.
The chicken itself was delicious. It was moist and flavorful. Definitely one of the better rotisserie chickens I've purchased anywhere. The spices and seasonings were definitely gave it a flavor that is noticeably different than one you might pick up from say, the grocery store.
Start of the show may have been the aforementioned yellow/orange aji sauce. El Arepazo be on notice: you may have a challenger for most awesome sauce in town. This stuff was delicious. I will go back for the sole purpose of eating more of it.
I had the chance to sample their ceviche, and it was also really good. Unlike ceviche I've had before, there were large chunks of fish. And it was covered it a lot more sauce/juice than I've had on previous occasions.
I have it on good authority that the food here, from start to finish, is quite authentically Peruvian. But even if it wasn't, it still comes highly recommended.
