One of my favorites so far is Cinerino. It's a Sardinian sheep's milk cheese coated in ash. It's on the harder side and has a really nice bite to it.
If you like brie, you might try D'Affinois. It's a French cow's milk cheese that is soft, creamy and delicate.

Lake Eerie Creamery's goat cheese is super excellent :)
Imported cheeses have all kinds of chemicals/stabilizers in them-- when they make it here to the US, they aren't in the same league as the fresh local stuff

We went to the open house at Oakvale a few months back (thanks to the heads-up on CMH Gourmand's blog!) and it was really nice; super nice owners and got to taste all their incarnations of gouda. Though I think we both agreed the aged gouda was our favorite.

I thought I would bring this thread back because it's always a good time for cheese.
My new favorite is Wagon Wheel from Cowgirl Creamery, available at Curds and Whey. Those guys are cheese wizards.
I also have to revise my stance on even occasional processed cheese food now that I've learned how stupid easy it is to make great mac and cheese with a simple bechamel and how much better grilled cheese is with real cheese. Anything Kraft can do, Gruyere can do better :)

Trader Joe's has a cheddar/gruyere blend that makes pretty fantastic grilled cheese sandwiches.

How about some luv for Blue Cheeses?
My two favorites are Cambozola (Think Brie meets Gorgonzola) and Cashel Irish Blue Cheese (has the texture of cream cheese with a strong "funk" and veining)
I dig Stilton with Lemon Rind as well - reminds me of a crumbly cheesecake.
