As restaurants go, diners are proudly frills-free and as reliable as clockwork. The coffee is hot and plentiful, poured by brisk yet gracious waitpeople who welcome regulars and first-timers like family with a “What’ll it be, hon?” The radio is on — or maybe a television. The daily special might offer baked fish or pot roast — filling, nothing fancy. Ding. Order up.
