I just watched the recent episode of Bourdain's No Reservations in Japan and I really, really, reeeeeeeaaaaally want some good cold soba now. Any recommendations? Perhaps Kihachi?

Kihachi for sure has it. Their noodle/soba/soup menu is excellent & well priced to boot.

Yep, Tensuke, Kihachi, Japanese Oriental Restaurant, and Ba Sho have 'em. Wouldn't be surprised if there are quite a few more beyond that (Sushi Bistro Masa, Kikyo, Yoshi's...)

Where they're hanging out in that mountain ski shack and dude is making up those noodles?

Cook up some soba noodles ( seen them at giant eagle. no, really ).
Once cooked, drain, then rinse with warm water.
Add them to a bowl filled with ice water.
Individual diners have a small bowl with toasted, ground sesame seeds and soy sauce mix. Add scallions, cut dried chillies and/or mung bean sprouts to taste.

A friend of mine is actually a server at Sushi Bistro Masa, so I'm going to text her about it RIGHT NOW. Ha. Where's this Ba Sho? I'm not familiar. Would you highly recommend checking it out?

We mix soba noodles with a Ginger Scallion Sauce (see momofuku).

I do my cold soba with a sauce of grated ginger, minced garlic, toasted sesame oil, peanut butter, soy, rice vinegar, red pepper flake, julienne cucumber, sesame seeds, and scallion.

I eat mine with mentsuyu (noodle dipping sauce that come in bottles) with green onion and wasabi. Zaru soba is a beautiful thing in summer - quick and refreshing!
