Restaurant Spain---Latin/Salsa/Ballroom :D
TECHNO far surpasses all other genres IMO. If I have to be at another place I like Kennedys Korner or After 5 (it closed or changed I think??) it is total hiphop DJ Funk style booty house fun.
Dancefloor at Sugar is THE WORST for the number of people who go there...they can afford an interior designer to fix that mess...it is SO irritating. Skullys and Sugar too dark and too crowded with not that great sound systems.
Best SPACE for dancing ranked in order: (Just go on a non-techno night)
KARMA
Basement at BoMA (upstairs when the runway or beds are not in the way)
BRISTOL
Just go on non techno nights.

For Latin/Salsa Dancing I would have to vote La Fogata Grill (Fridays - Salsa Fever). The atmosphere is elegant, dance-oriented (not your typical club hang-out and girl-pick-up place), the dancers (guys and girls) are very polite and ask for your permission to dance (or your partner's permission if you have company).
Also the dance floor is simply out of this world - if you're a dancer you know exactly what I mean. The music is somewhat salsa intensive, which can be a good thing, if you're there for the dancing.
The other important feature that makes it earn my vote is the dance lesson. It is extremely helpful for those who have never danced salsa/merengue/bachata before. They teach you the basics so you don't end up on the side watching other people dance. More advanced dancers may not ask you to dance the first time around, but are very friendly and helpful when asked to dance.

Is there a specific music you are looking for? Hip Hop, Top 40, Rock, etc? I go out nowadays mainly for techno, trance, house, progressive, d&b, and so on and so forth, but I think you would find plenty of suggestions if you narrow your music preference or location a bit.
I don't have as much a problem with Sugar as enzo, but can't say I've been there on a "non-techno" night in a long long time. I do agree that Karma has prob the best setup, just don't know what's been going on there lately. It never seems to get enough people through the doors to fill up. Same with BoMA. Not nearly as pretentious as some might lead you to believe. Beautiful venue, though. I remember Carlile Club was a lot of fun back in the day, but now it is Mynt, and haven't been there since the change. If it is still the same setup/music, then I think fun can be had there and it would probably be my first choice.
Damn, just realized my rambling was probably of very little help. Sorry.
carry on :)
