Just to start a shared thread. I had not seen one prior. I have been putting up green beans and tomatoes like a madman. Probably will switch to Minestrone soon to change it up a little. Lynd's told me that they will probably have their canning special corn coming in a few weeks. Anyone want to share? Bushel of corn for 17 bucks. A colossal amount of sweet corn.

I'm a canner but not very satisfied with the quality of canned vegetables so I tend to freeze them. I am going to can salsa for the first time this year as soon as I can steal enough ripe tomatoes from the squirrels who ravage my garden.

My wife is interested in canning. We've never done it before. I have to admit, I'm a worrier, and the prospect of botulism has me spooked...

@chris, the risk of botulism is very very low.

I can vouch for Rachel's class! They are a good value and very informative. I took the pickling class this past week and already made and canned another batch of pickles!

Interesting stuff Rachel. I am pretty much exclusively a pressure canner- meat, soups, vegetables, broth, beans, etc. I have given classes to Grandview folks and will be doing another one for STEPGrandview here shortly(already full). Without stepping on your toes, I would be happy to give pressure canning classes at Wild Goose if that is something that anyone would thing is beneficial.

The cheapest way to get to a class right now is to register for something in September at Franklin Park. Many, including my 'putting up' workshop, are half off for members.
Derm, I rent Wild Goose for classes. If you want to do that too, I'm sure they would be open to it.

Slow canning season so far. Did put up 5 qts of squash today. Looking forward to the critical dirt cheap turkey canning season upcoming. Plus dirt cheap taters and sweet tater season.

Good deals to be found looking around on canning supplies. The Chambers Rd Kroger put out some cases of quarts for five bucks, lid and rings for one dollar. I took most of the good stuff, but there was still about a hundred boxes of lids for a dollar for regular size. That is a good deal. Other Krogers might be dumping their end of year stock as well.
Put up Baby Bella mushrooms and mushroom broth today. Aldi's had them on sale for 59 cents per pack.

Only a week left to get the dirt cheap TGiving turkeys. I am on number three so far. It is defrosting right now and will be turned into about a dozen pints of roasted meat and a dozen pints of broth. With a dinner to two tossed in. Will probably put up some sweets as Aldi's has them a buck a bag right now, same with regular potatoes at 2 bucks for two pounds.

Hi Rachel. I can't find information on the price of the classes. I'd be interested. Do you use a water bath method at all or is it all pressure cooking?
Also, do you need a pressure cooker made especially for canning. I have a pressure cooker I use a lot for beans, but I assume that is not useful for caning, right?
