I just ran across two restaurants that had this listed on their menus? Strangely enough, both were in Grandview. What is it?

Sure. I have no idea why people put that on the menu -- maybe some of the restaurant folks can tell us. 90+% of humanity has never heard of the things, and the word "airline" doesn't exactly evoke culinary excellence. "I'd like some airline chicken... and do you have any diner coffee to go with that?"
