There meaning the Commons? Considering the foot traffic in that area, two coffee shops (Java Jan and Capital Cup Coffee) isn't what I would call saturation. Market 65 and Mojo Lounge offer locally roasted Stauf's in the morning and throughout the day, but offer way more than just coffee. And of course the Sheraton on Capital Square has a Starbucks kiosk, but all hotels that size have similar setups for their guests.
There meaning downtown? Regardless of where I might be downtown, I've never felt that it is saturated with coffee shops, and I am thankful for Starbucks, Flaxella, Tim Horton's or wherever else I may end up. I love coffee, so maybe I have a different relationship with with coffee shops than you. Even though I love coffee, I, and many other people, will only walk so far for it. After all, we only have so much time in the day. :)
Creativity? Coffee and foot rubs? Coffee and dry cleaning? Coffee and crepes? What kind of ideas are you proposing, with or without coffee? Before Java Jan, someone operated a coffee kiosk in 175 On The Park for many years, so coffee in that building is nothing new to those of us that work in that area.
