One of the best reasons to try off-menu specials is freshness.
If the kitchen has managed to get its hands on a great-quality main ingredient that isn’t featured on the printed menu, the only way it might be offered is via the server’s recital of that evening’s specials.
In a landlocked venue such as central Ohio, this happens most frequently with seafood.
A fresh ingredient, of course, is only the start. The kitchen has to know what to do (or not do) with it – which it does at G. Michael’s.
