In just one year, Bibibop Asian Grill is going from zero to four locations. Originally opened in August on Fifth Avenue and later expanded to Henderson Road, Bibibop will open a third store at Polaris this summer and a fourth inside Easton Town Center this fall.
The Easton location will be housed inside the mall in the former Cup O Joe / Mojoe Lounge spot, which closed in January.
“This is such a prominent location, so this will be a ‘statement’ store for us,” explains Bibibop Concept Administrator Ellie Robinson. “Everybody visits easton, not just from Columbus, but from all over Ohio, so this will kind of be like a billboard for us.”
For those who haven’t taste-tested the restaurant yet, Bibibop takes the familiar fast-casual assembly-line concept and turns its attention toward Korean flavors with bowls, wraps and salads filled with spicy chicken, purple rice, bean sprouts, daikon, egg, yum yum sauce and other combinations of ingredients.
“Bibibop is a unique new concept and we’re really excited about adding it to the dining lineup at Easton,” Said Easton’s co-developer and management firm Steiner + Associates Executive Vice President Beau Arnason. “The fast-casual model is perfect for the vibrant location in the station building near the movie theatres.”
