    Best Bites Breakdown: Rishi Sushi

    There isn’t anyone in the city who doesn’t like Asian food of some kind. Whether you go in for traditional Vietnamese Pho, Sweet-and-spicy Korean Bulgogi, or quintessentially American General Tso’s Chicken, there’s something about oriental flavors that get our juices flowing.

    So, imagine East meeting West on a bun, and how delectable the fusion must be. Or better yet, don’t imagine, just try one of the two burgers that Rishi Sushi will be presenting at CU’s Best Bites: Burgers event. Try them both.

    David Kim – chef, manager, and co-owner of Rishi Sushi – begins all of his burgers with a 21-day dry-aged beef patty he then marries with his trademark combinations of flavors, textures, and toppings to create a perfectly delicious and unconventional taste experience.

    The Ssam-I-Am Burger sits on butter brioche, and is topped with an inspired collection of fixings that include braised duroc pork belly, sautéed kimchi, gouda, jalapeños, cucumber, romaine, and ssamjang sauce – a spicy concoction made with soy bean paste, roasted garlic, and aromatics.

    The Spam Burger combines roma tomatoes, red onions, grilled pineapple, spicy truffle ketchup, gouda, and walnut-panko fried spam atop the beef patty. The Spam Burger is an obvious nod to Hawaiian culture, whose Polynesian influence we often forget to consider when we think of Asian flavors.

    There’s nothing that tastes like these two burgers in town. One of them might even be the best burger in the city. Come find out at the Best Bites: Burgers event, scheduled to take place on Wednesday, August 20th, 6pm – 9pm, at the High line Car House, 550 South High Street.
